Healthy Meatball Recipe

This Indian-inspired recipe has it all: complete proteins and healthy unsaturated fats. And, who doesn’t love a good, moist meatball?

Here’s our simple and delicious, fitness-friendly version:

1 lb. Ground Beef (93/7 or leaner. I use grass fed and local when possible)

1/2 small Green Bell Pepper or 1 Serrano Chile pepper, seeded and diced (if you like it spicy)

2 tsp Fresh Ginger

A bunch of fresh diced Cilantro

1 1/2 tbsp Coconut Oil

5 garlic cloves, diced (or, for the busy bees, 2 tsp fresh garlic powder)

4 shallots or 1 small yellow Onion, diced

2 medium tomatoes

2 tsp Mustard Seeds

1 tsp Cumin powder

2 tsp Coriander powder

1/2 tsp Cayenne pepper (if you like it spicy)

1 can Coconut milk

Cooking Instructions:

Mix all the ingredients and roll into 16 meatballs. Set aside.

Sautee the Mustard Seeds in the coconut oil on medium high, covered, for a few minutes. When they're done popping for the most part, add the onion and garlic. Cook for a few minutes. Add the cumin, coriander and cayenne. Cook for 30 seconds. Add the tomatoes. Cook for 5 minutes. Add the coconut milk and meatballs. Cover and simmer for 20 minutes. Garnish with chives.

This will make 5 servings. It's packed with complete proteins and healthy fats. I recommend it as a low-carb option for off days. Save your carbs for workout days. The leftover portion is just as good the next day.

For those of you who are bulking or building muscle, serve over a healthy portion of brown rice. Perfect bodybuilding recipe.
